Well written! Elaine’s right on the cold water. My routine: Puncture egg with straight pin, place in cold water to cover, stir once or twice counter-clockwise as it comes to full boil, time one minute, turn off heat, plop on lid, set timer 9 minutes. Wash pin and stick it back in pin cushion in drawer. Time 9-13 minutes, drain and dash with cool water. Peel under small stream of cold water, nestle beside toast, add a little sea salt, and enjoy.
